Southern Cheesy Corn Pudding is a beloved traditional holiday and pot-luck dinner side-dish in the South! If you like corn, and you like cornbread, you will love this decadent and creamy corn casserole recipe. Just like grandma used to make with canned corn and Jiffy cornbread mix.

Ingredients
  • 1can whole kernel corndrained, 15.25 oz
  • 1can creamed corn14.75 oz
  • 1package corn muffin mix8 oz, I used Jiffy
  • 1cup sour cream
  • 4Tbsp unsalted buttermelted
  • 1cup shredded sharp Cheddar cheese
Instructions
  1. Preheat oven to 350 degrees.
  2. Add the cream corn and the can of corn kernels to a large bowl. Mix and add corn muffin mix, sour cream, and melted butter. Mix well.
  3. Pour mixture into a 9×13 baking dish or casserole dish and bake for 45 minutes or until top is golden brown. Remove from the oven and sprinkle the cheddar cheese evenly over the top.
  4. Bake for an additional 15-20 minutes or until the cheese is melted.
  5. Remove from the oven and let stand for 5-10 minutes and serve.
