Super Simple Chicken and Chorizo Chili is a delicious combination of leftover chicken, spicy Mexican chorizo sausage, peppers and onions, black beans, salsa verde, spices, Rotel tomatoes and chiles and fire roasted tomatoes.
Not only is it a perfect use for leftover cooked chicken, but it’s also just as tasty if you swap the chicken out for leftover beef, pork or even leftover Easter ham. We had it for dinner last night with chicken, and my husband said, as he was on his way for seconds, that he liked it better than my regular chili, which is also really good. It’s that yummy! Add in the fact that you can have it on the table in less than 20 minutes and well, this dish is a sure-fire winner!
The idea for Super Simple Chicken and Chorizo Chili was hatched as I was pondering what to do with some leftover chicken fingers and chorizo sausage. Luckily I already had my “chili holy trinity” in the pantry which is a can of Rotel tomatoes, a jar of salsa verde, and two cans of fire-roasted tomatoes. Honestly, I think you could combine these ingredients with just about anything, and it would be delicious! Throw in some peppers and onions and spices, and you have a scrumptious healthy and quick chili dinner. I served this chili with some oh so yummy Spicy Jalapéno Cornbread and the combination of the chili and jalapéno laced cornbread was a match made in heaven!
Even though chili is not technically Mexican, it really hails from Texas, Super Simple Chicken and Chorizo Chili would still be a great and simple to make entrée to serve for Cinco de Mayo! Olé!

Of course, with chili, it’s all about the garnishes and avocado, sour cream, crushed tortilla chips and grated cheddar cheese, will send this Super Simple Chicken and Chorizo Chili into the next stratosphere of deliciousness!
When you are ready to make Super Simple Chicken and Chorizo Chili, gather your ingredients and add the olive oil, chopped onion and chopped bell pepper to a large pan or dutch oven over medium heat.
Remove the casing from the chorizo, crumble and add to the peppers and onions. Cook frequently stirring for about 5 minutes, or until the chorizo has browned slightly, and the onions and bell pepper have softened.
Add the cooked chicken, ground cumin, and chili powder. Mix well.
Add the salsa verde, fire-roasted tomatoes and juice, tomatoes and green chilies and juice, chicken stock, and black beans and mix well. Once this mixture starts to simmer, turn the heat down to low and cook for about 10 minutes to allow the flavors to marry.
Serve the chili hot and garnish with sour cream, grated cheese, chopped avocado and tortilla chips. Optional, squeeze a little fresh lime juice on the chili right before you serve it. Enjoy!
