This Ultimate Chicken Club Sandwich with Apple and Bacon is everything a great sandwich should be. Tender slices of deli chicken, nestled between tart Granny Smith apples, crispy bacon slices, and melted gooey provolone cheese. And, the crowning glory, everything is blanketed with a deliciously sweet Vidalia Onion Poppyseed Vinaigrette. It doesn’t get much better!
Oh, just thinking about all of those yummy flavors coming together in one bite makes my mouth water, and I know when you try it, you will be hooked just like I was.
The inspiration for this recipe is a chicken club sandwich at one of our favorite places to eat in Brevard, NC, Mayberry’s. Mayberry’s is located in the middle of downtown Brevard and is reminiscent of an old-fashioned sandwich or soda shop. If you are ever visiting the area, be sure to stop by and try one of their unique and tasty sandwiches, salads or soups. I can promise you won’t be disappointed.
Mayberry’s serves their chicken club sandwich on a scrumptious freshly baked Portuguese Roll. Unfortunately, I couldn’t find anything similar at our local grocery store, so I had to substitute hamburger buns. The other ingredient that is uniquely theirs is a sweet Vidalia Onion Vinaigrette, which they slather over the sandwich.
I did manage to find a very close match with The Orchard’s house dressing, Vidalia Onion Poppyseed Vinaigrette. The Orchard, which is located in Cashiers, NC, is another one of our favorite places to eat in North Carolina. In addition to fabulous food and great ambiance, they also make and sell this salad dressing. Whenever we go there, I pick up a bottle.
What is a club sandwich?
In general, most club sandwiches contain sliced cooked chicken or turkey, and bacon, plus lettuce and tomato. Most often club sandwiches are made with three slices of bread and cut into quarters or halves. Because they are so thick, most are held together with toothpicks. For this chicken club sandwich, I opted for a hamburger bun, but you could certainly make it using regular bread or toast.

How to make this Ultimate Chicken Club Sandwich with Apple and Bacon:
First, turn on your oven broiler.
Slice the buns in half, place them on a baking sheet and toast them lightly under the broiler. Watch carefully; this will only take a minute or two. When the buns are lightly toasted, add a slice of provolone to each half and the sliced chicken breast, and put under the broiler for a few seconds to melt the cheese.
Remove the buns from the oven and add the bacon and apple slices.
Top with about a tablespoon of Sweet Vidalia Onion Poppyseed Vinaigrette and serve immediately.
Sharon’s Expert Tips:
- You can also substitute sliced turkey and make a turkey club sandwich, instead of the chicken.
- Substitute any type of apple you happen to have on hand or like for the Granny Smith apples.
- You can also substitute bottled poppyseed dressing for the Vidalia Onion Poppyseed dressing.

Notes
- You can substitute a bottled sweet onion vinaigrette or poppyseed salad dressing for the Vidalia onion poppyseed dressing.
- I like the tartness of the Granny Smith apple in this sandwich, but you can certainly substitute any other type of apple you have on hand or happen to like.
- You can also substitute sliced turkey and make a turkey club sandwich, instead of the chicken.
