Sweet Apple and Bacon Club Sandwich is everything a great sandwich should be. Tart Granny Smith Apples, nestled between crispy bacon slices (that’s right, you know you have to have bacon), melted gooey provolone cheese, tender slices of deli chicken, and the crowning glory, a deliciously sweet Vidalia Onion Poppyseed Vinaigrette. Oh, just thinking about all of those yummy flavors coming together in one bite makes my mouth water, and I know if you try it you will be hooked just like I was.
The inspiration for this recipe is a sandwich at one of our favorite places to eat in Brevard, NC, called Mayberry’s. Mayberry’s is located in the middle of downtown Brevard and is reminiscent of an old-fashioned sandwich or soda shop. If you are ever visiting the area, be sure to stop by and try one of their unique and tasty sandwiches, salads or soups. I can promise you won’t be disappointed.
Mayberry’s serves this sandwich on a scrumptious freshly baked Portuguese Roll, but I couldn’t find anything similar here, so I had to substitute hamburger buns. The other ingredient that is uniquely theirs is a sweet Vidalia Onion Vinaigrette which they slather over the sandwich. I did manage to find a very close match with The Orchard’s house dressing, Vidalia Onion Poppyseed Vinaigrette. The Orchard is another one of our favorite places to eat in North Carolina, in Cashiers. In addition to fabulous food and great ambiance, they also make and sell this salad dressing and whenever we go there, I pick up a bottle. When you go to the store, look for a sweet onion vinaigrette, or if you can’t find that, a poppy-seed dressing would probably work as well. The other ingredients are easy: Granny Smith Apples, bacon, deli slices of chicken, (turkey or ham would also be delicious) and provolone cheese.
To make this yummy sandwich, turn your oven on to broil.
Slice the buns in half, place them on a baking sheet and toast them lightly under the broiler. When they are lightly toasted, add a slice of provolone to each half and the sliced chicken breast, and put under the broiler for a few seconds to melt the cheese.
Remove the buns from the oven and add the sliced chicken, bacon and apple slices.
Top with about a tablespoon of Sweet Vidalia Onion Poppyseed Vinaigrette and serve immediately.
