Chicken Divan with Curry

Made without canned soup, this retro Chicken Divan casserole is full of crisp fresh broccoli, tender chicken, and the best-ever homemade cheesy mornay sauce with sour cream.


Blanch broccoli florets with water in a microwave, or in a pot of boiling water on the stovetop.

Melt butter in a skillet over medium-high heat. Add flour and cook, whisking constantly, until golden.

Add chicken stock and wine, and whisk constantly. Cook about 3 minutes to thicken.

Reduce the heat to low. Stir in sour cream and one cup of shredded cheese. Whisk until smooth.

Remove from the heat and add chicken, broccoli, lemon juice, and curry powder. Mix well.

Spread into a prepared baking dish. Top the casserole with panko and shredded cheese.

Bake uncovered for 30 minutes, until the casserole is bubbly and the top is golden brown.
