Easy Chocolate Peppermint Whoopie Pies

All wrapped up like a present with crushed candy canes these are a Christmas dream come true for chocolate cookie lovers of all ages!

Here's what you will need: Devil's food cake mix Eggs Vegetable oil  Confectioner's sugar Vegetable shortening Marshmallow cream Milk Peppermint extract Candy canes

Step 1: Preheat oven to 350F and line a cookie sheet with parchment paper or nonstick baking mat.

Step 2: Add the cake mix, oil and eggs in a large bowl. Mix with electric mixer at low speed until completely combined. 

Step 3: Either pinch pieces of batter or use ice cream scoop and using your hands shape into one inch balls. Place one inch apart on cookie sheet and use your hand or glass to flatten slightly. 

Step 4: Bake for eight to ten minutes. 

Step 5: Remove immediately from sheet with spatula and cool on wire rack.

Step 6: Place one cup of the sugar and shortening in a large bowl and beat with an electric mixer on medium speed until well combined. Add the rest of the sugar and continue beating until everything is well combined.  Then add marshmallow cream, one tablespoon of milk, peppermint extract and beat until fluffy; about five minutes. 

Step 7: To assemble spread a heaping teaspoon of the filling on one cookies. Place another cookie on top and gently press down.

Step 8: Put the crushed candy canes on a plate and gently roll the sides of the cookies in the candy to coat.

Tips: The hardest part about this recipe is removing individual wrappers from all of the candy canes!  If possible purchase unwrapped candy canes.
