cold spanish soup

Full of healthy tomato and vegetable goodness. Gazpacho is great all year long and you can make it in just ten minutes!
Here is what is in it:
Step 1: Seed & roughly chop green peppers and pulse in food processor; remove.
Step 2: Repeat process with cucumber & onion; pulsing 8~10 times.
Step 3: Add both diced tomatoes, garlic, tomato juice, red wine vinegar, lemon juice and olive oil to the bowl.
Step 4: Add kosher salt & black pepper; stir to combine.
Optional~a few drops of hot sauce.
Step 5: You can enjoy it right away but is actually better after chilling.
Variations: Replace some or all of tomatoes with mango, watermelon, strawberries or zucchini, corn, or squash! Create your personalized version.
