A savory classic full of fresh sweet ripe tomatoes, melted cheddar cheese, tangy mayonnaise, Dijon mustard, and parmesan cheese. Baked in a rich buttery crust of Ritz crackers and even more parmesan cheese!

Step 1: Make crust by processing crackers into fine crumbs. 

Step 2: Add melted butter until combined and pour out into a pie plate.  Press evenly to form crust & Bake ten to twelve minutes at 350F.

Step 3:  Salt slices atop paper towels; let sit for 20 minutes then blot to remove moisture.

Step 4: Add one third cheese to cooled crust, layer of tomatoes and salt & pepper.

Step 5: Repeat with cheese and tomatoes and finish with cheese.

Step 6: Mix mayonnaise, Parmesan and Dijon and spread on top. 

Step 7: Bake for 20 minutes and cool on rack for at least half an hour.
