Easy Southern Tomato Pie
A savory classic full of fresh sweet ripe tomatoes, melted cheddar cheese, tangy mayonnaise, Dijon mustard, and parmesan cheese. Baked in a rich buttery crust of Ritz crackers and even more parmesan cheese!
Make crust by processing crackers into fine crumbs.
Add melted butter until combined and pour out into a pie plate. Press evenly to form crust & Bake ten to twelve minutes at 350F.
Step 3: Salt slices atop paper towels; let sit for 20 minutes then blot to remove moisture.
Add one third cheese to cooled crust, layer of tomatoes and salt & pepper.
Repeat with cheese and tomatoes and finish with cheese.
Mix mayonnaise, Parmesan and Dijon and spread on top.
Bake for 20 minutes and cool on rack for at least half an hour.
