Lucky Black-Eyed Peas

With their nutty texture and tasty earthy flavor, Southern Black- Eyed Peas are an inexpensive, nutritious, and easy to make side dish.  Although they are delicious any time of year, many folks also believe that eating them on New Year's Day will bring good luck, and prosperity in the new year!

You will need the following ingredients: dried black-eyed-peas, chicken stock, ham hock, onion, garlic, crushed red pepper, garlic, red wine vinegar, kosher salt, and ground black pepper. 

To rehydrate dried peas, soak them overnight in a bowl of cold water. Rinse and drain.

Cook onions and ham hock in olive oil. 

Add garlic, peas, chicken stock, red wine vinegar, and crushed red pepper flakes. Simmer 45-60 minutes

Southern Black-Eyed-Peas: Serve with collards and cornbread for good luck and prosperity in the new year!
