Stuffed Cornish Hens with Cornbread Stuffing

This easy Stuffed Cornish Hens with Cornbread Stuffing recipe features roasted, juicy Cornish game hens filled with perfectly seasoned stuffing with dried cranberries and roasted pecans.

How to Make Stuffed Cornish Game Hens

Melt butter in a large skillet and sauté the shallots and celery.

Add cranberries and pecans. Cook for another two minutes or so.

Crumble the cornbread muffins over the cranberry mixture.

Add herbs and spices. Then stir in stock and salt and pepper to taste.

Pat dry and season the birds. Loosely stuff each with 1/3 cup of stuffing.

Tie legs closed and place the hens in a baking dish. Brush with oil and season.

Bake the Cornish hens for about 1 hour at 400°F, until golden brown.

Place Cornish hens on a platter, and serve with extra stuffing on the side.
