Instructions
Preheat oven to 400 degrees F.
Place bread cubes on a baking sheet and bake for 8-10 minutes or until the bread is lightly toasted. Set aside.
Heat a large skillet over medium heat. Add olive oil, garlic, sage and thyme. Cook for 2-3 minutes to infuse the oil with flavor. Remove the sage leaves and set aside on a paper towel. Discard the garlic and thyme sprigs.
Add the onions to the pan and reduce the heat to medium-low. Cook the onions about 15 minutes or until they are caramelized. Season with salt and pepper. Remove the onions from the pan and set aside.
Add the apples and pecans to the pan. Stir frequently and cook for about 4-5 minutes or until the pecans are lightly toasted, and the apples have softened just a bit.
Add the egg, cream, and chicken stock to a large bowl and whisk until combined. Add the onions, apples, pecans and bread cubes. Mix well.
Lightly grease a 2-quart baking dish and add the dressing. Drizzle a little extra virgin olive oil over the top, sprinkle lightly with kosher salt and pepper, and bake covered 20 minutes. Uncover the dish and continue baking an additional 15 minutes or until the top is golden brown and crusty. Let stand 10 minutes and sprinkle with the cooked sage leaves.
