Place all ingredients in a medium size bowl and whisk until the cocoa powder is dissolved.
Pour into individual dishes, cover and refrigerate for at least 6 hours or overnight until the chia seeds turn jelly-like and the pudding thickens. Stir a few times to make sure all the seeds don't go to the bottom.
If desired, top with fresh raspberries and serve! Will keep in the refrigerator covered for several days.

Think you might like to try vanilla pudding? Reduce the milk to 1 cup, add 1 cup of plain greek yogurt, and a teaspoon of vanilla extract, mix everything together, let it sit for 6 hours and maybe top it with some fresh strawberries or blueberries.[nutrition-label]
