Canadian Bacon and Brie Quiche
Canadian Bacon and Brie Quiche is delicious and easy to prepare choice for a healthy low-carbohydrate breakfast, brunch, lunch, and yes, even dinner!

Servings: 8 servings
- 16 slices Canadian bacon
- 8 oz Brie cheese rind removed and cut into cubes
- 8 large eggs lightly beaten
- 1/2 cup mayonnaise
- 1/2 tsp pepper
- 2 Tbsp grated Parmesan cheese
- 1/2 tsp italian seasoning
Arrange Canadian bacon on the sides and bottom of a lightly greased 9 1/2-10 inch pie dish.*
Remove rind from Brie, and cut the cheese into small cubes
Stir together eggs, mayonnaise, pepper, Parmesan cheese, and italian seasoning. Mix well. Add Brie cubes and mix again.
Pour mixture into your prepared pie dish.
Bake at 375 degrees for 30-35 minutes or until a knife inserted in the center comes out clean.
Let quiche stand for 5 minutes before slicing and serving.
*Updated to correct the size of the pie dish. I use a deep 9 1/2 inch pie dish and the filling fits perfectly in it. If you use a 9-inch pie dish as was originally listed you will have about 1/2 cup of leftover filling.
