Canadian Bacon and Brie Crustless Quiche is a delicious and easy to prepare choice for a healthy, low-carbohydrate breakfast, brunch, lunch, and yes, even dinner!
Arrange Canadian bacon on the sides and bottom of a lightly greased 9 ½-10 inch pie dish.*
Remove rind from brie, and cut the cheese into small cubes
Stir together eggs, mayonnaise, pepper, Parmesan cheese, and Italian seasoning. Mix well. Add the brie cubes and mix everything again.
Pour mixture into your prepared pie dish.
Bake at 375 degrees for 30-35 minutes or until a knife inserted in the center comes out clean.
Let quiche stand for 5 minutes before slicing and serving.
Notes
I use a deep 9 ½ inch pie dish and the filling fits perfectly in it. If you use a 9-inch pie dish as was listed initially you will have about ½ cup of filling leftover.
