Dark Sweet Cherry and Pomegranate Sherbet is a delightfully refreshing combination of dark sweet cherries and pomegranate juice and is a perfect summer dessert!
3cupsdark sweet cherriesfresh or frozen and pitted
1cupsugar
½cup100% pomegranate juice
1-½cupswhole milk
1tablespoonheavy cream
1tablespoonlemon juice
Instructions
Place the cherries, sugar, and pomegranate juice in a saucepan over medium heat and bring to a boil. Turn the heat down to low and simmer for about 20 minutes. Remove from the heat and let cool.
Once the mixture is cool, put it in a blender and blend until it is smooth.
Add the milk, cream and lemon juice and blend until everything is throughly mixed.
Add the mixture to your ice-cream maker and process for about 25 minutes or until the mixture is frozen.
Transfer to an air-tight container and put in the freezer for at least 4 hours to firm the mixture up.
