My homemade baked pumpkin donuts are a three-ingredient miracle. But what makes this delicious cake donut recipe a winner is how simple it is to make — great taste in half the time.
Add the box of dry cake mix, pumpkin puree and the pumpkin pie spice mix to a large bowl.
Use an electric mixer and blend all ingredients.
Spray a donut pan with non-stick cooking spray.
Place the batter in a gallon-size storage bag and snip one pointy end with scissors. Seal the bag and pipe the mixture into the donut pan.
Bake the donuts for 15 minutes. Remove from the oven and turn the donuts out on a wire cooling rack to cool.
If you only have one donut pan, repeat as needed with the rest of the batter.
Serve the donuts warm for breakfast or a snack.

Sharon's Expert Tips:This donut batter is stiff. However, if you think your mixture is too thick, add a tablespoon or so of heavy cream or milk. These pumpkin donuts are delicious as they are. However, if you would like to add a topping, combine several tablespoons of granulated sugar with one teaspoon of the pumpkin pie spice mix or one teaspoon cinnamon. Brush the tops of the donuts ever so lightly with melted butter, then dip them into the sugar and spice mixture.No pumpkin pie spice mix, no problem! Combine one tablespoon cinnamon, one teaspoon ginger, and one teaspoon ground nutmeg. Voila, pumpkin pie spice mix!I ordered my donut pan from Amazon. If you don't have a donut pan, you can use a mini-muffin pan. Be sure to coat it with non-stick cooking spray before adding the batter.I have tried various methods of filling the donut wells with batter and using the plastic bag to pipe it in seems to work best. You could also use a regular piping bag and a large piping tip. I've also tried to use just a spoon, but it takes forever and makes a mess.
