How to Make Creamy Sweet Potato Soup

Melt butter in a large pot over. Cook the onion and carrots, then also garlic.

Then add sweet potatoes, dried spices, and a sprig of fresh thyme.

Add chicken stock and simmer for 30 minutes until the potatoes are soft.

Remove from the heat and use an immersion blender to puree smooth.

Lastly, add cream, molasses, salt and pepper to the vegetable soup. 

Serve the soup hot with chopped nuts, bacon, sour cream, or other toppings.
