How to Make Green Chicken Enchiladas with Salsa Verde

Quarter the tomatillos and onion, and cut the jalapenos in half. 

Roast the veggies and garlic in a preheated oven for about 15 minutes.

Cool the veggies, then process with spices, cilantro, and lime juice.

For the filling, first saute the onion. Then add garlic, chili powder, and cumin.

Stir in flour. Slowly whisk in chicken stock and cook until it starts to thicken.

Turn off the heat. Mix in half of the salsa, cheese, and shredded chicken.

Add some salsa to the bottom of a large baking dish. Spread out evenly.

Put ½ cup of the filling mixture in the center of a tortilla, and roll up tightly.

Repeat with all tortillas. Top with salsa and shredded cheese.

Bake uncovered for 30-40 minutes until the cheese has melted.

Cool and garnish with your favorite enchilada toppings, if desired.
