Classic Southern Potato Salad

A classic Southern Potato Salad, just like Grandma used to make; this easy old-fashioned side-dish is creamy, tangy deliciousness. And, it's full of crunchy dill pickles, yellow mustard, mayonnaise, and must-have hard-boiled eggs!

Ingredients: Russet Potatoes Kosher Salt Black pepper Hard-boiled eggs Dill pickles Dill pickle juice Sweet yellow onion Mayonnaise Yellow mustard Paprika


Step 1: Peel potatoes.

Step 2: Cut the potatoes into cubes.

Step 3: Bring a large pot of water to a boil and add the potatoes. Cook for 10 minutes. Drain the potatoes in a colander.

Step 4: Combine the mayonnaise, mustard, onion, pickles, pickle juice, hard-boiled eggs, salt, and pepper in a bowl.

Step 5: Add the potatoes, stir to combine. Garnish with paprika and serve.
