2cupsshredded cheddar or Colby Jack cheese, divided
½cupranch dressing
1teaspoongarlic powder
Freshly cracked black pepperto taste (try about 15 twists of a grinder)
2tablespoonschopped green onions or chives, plus more for topping
2cansrefrigerated crescent rolls8 each, 16 total
Optional for serving: extra ranch dressingsour cream, hot sauce
Instructions
Preheat oven to 375°F. Line a large baking sheet with parchment paper or use a round baking stone if you have one for more even browning.
In a medium bowl, combine chicken, 6 slices chopped bacon, cream cheese, half of the cheese, ranch dressing, garlic powder, black pepper, and 1 tablespoon green onions until evenly coated.
Arrange the crescent rolls in a ring on the baking sheet with the wide ends overlapping slightly to form a circle, points facing outward. Press to seal the inner edges. Spoon the chicken mixture evenly around the center of the ring.
Fold the points of the crescent rolls over the filling and tuck them underneath to enclose.
Sprinkle the remaining 1 cup of cheese and 2 slices of crumbled bacon over the top. Bake for 20-25 minutes or until golden brown and crisp. Remove from oven and sprinkle a few chopped green onions over the top.
Let rest 5 minutes before cutting and serving with extra ranch or sour cream.
Notes
The quickest way to cook crumbled bacon is to remove all 8 slices from the package at once and place them on a cutting board. You don't need to line them up perfectly. Just slice through the stack into roughly ¼-inch pieces. Add everything to a 10- to 12-inch skillet and cook over medium heat, stirring occasionally, until the bacon is browned and some fat has rendered. Use a slotted spoon to transfer to a paper towel to drain. Once cooled, you can chop the pieces smaller if desired. This method lets you cook all 8 slices at once, rather than in smaller batches, saving time and cleanup. When forming the crescent ring, place a small dipping bowl in the center to help visualize the circle. Start by arranging 4 crescent triangles in 4 different directions, then add one triangle just to the clockwise side of each. Continue working around the circle until all triangles are used. This method helps create an even, well-spaced ring.
