Make or purchase a wooden board in a tree shape. Ensure your board is clean and food-safe. Cover it with plastic wrap or parchment paper if you have any doubts.
Take your sliced meats, fold them in half, and fold them again. Insert a toothpick into the bottom point. Continue adding the folded meat to the toothpick. Repeat with all of the meat.
Remove the mozzarella from the packages and dry with a paper towel. Set aside. Cut the Colby jack and pepper jack cheeses into one-half-inch cubes. Set aside.
Wash your fruit and vegetables and pat dry with a paper towel.
Prepare your board or platter, and add the meats in three rows as pictured.
Add the cheeses as shown.
Add the berries, olives, and tomatoes, and finish with the nuts for the tree trunk.
Tuck in rosemary sprigs in empty spaces, and add optional crackers, sauces, and spreads. Be sure to provide serving utensils, plates, etc. Prepare for the compliments.
