This Sloppy Joe Cornbread Casserole Recipe makes the perfect easy weeknight meal! Just 20 minutes of prep before the oven takes over and does all the heavy lifting.
Preheat the oven to 375°F and spray a 9x13 inch baking dish with non-stick cooking spray.
Add the ground beef, salt, and pepper to a large skillet. Brown and crumble the beef over medium-high heat.
Add the onion and garlic to beef and cook for 3-5 minutes more or until the onions are translucent. Remove the skillet from heat.
Drain the water from the green chilies and add them to the meat mixture in the skillet, along with the ketchup, Worcestershire sauce, and mustard. Stir to combine all of the ingredients and set the skillet aside.
Whisk the Jiffy mix, eggs, and milk together in a mixing bowl, until the batter is smooth.
Fold the shredded cheese into the cornbread batter until it is distributed.
Pour the beef mixture into the prepared baking dish in an even layer.
Spoon the cornbread mixture on top of the beef. Spread the batter gently into an even layer.
Bake the casserole for 30-35 minutes or until the cornbread topping is golden brown and cooked all the way through. To see if the cornbread is done, insert a clean toothpick in the center. If batter is stuck to the toothpick, continue to bake for a few more minutes.
Allow the casserole to rest for a few minutes after taking it out of the oven. This will make it easier to cut and serve.

Test the cornbread for doneness by inserting a clean toothpick into the cornbread near the center of the baking dish. If the toothpick is clean, the cornbread is done. If it has batter on it, continue to bake until the toothpick comes out clean.You can use a canned sloppy joe mix, like Manwich, instead of the sauce ingredients in this recipe.Chopped bell peppers work in place of the green chilies. Just add them when you add the onions and garlic.Other types of cheese work well in this casserole. You can use cheddar or pepper jack in place of the Colby jack.Other brands of cornbread mix will work with this recipe. Just make sure to adjust the eggs and milk to the package directions.If you have picky eaters who would balk at the onion, leave it out and add a teaspoon of onion powder to the filling.
