1poundgreen beans; fresh or frozenthawed, ends trimmed and cut in half
2tablespoonsbutter
2clovesminced garlic
¼cupdiced onion
8ouncesmushroomschopped
½cupall-purpose flour
2cupschicken stock
2cupswhole milk or heavy cream,divided
½teaspoonsalt
½teaspoonblack pepper
2teaspoonssoy sauce
1cupcrispy fried onions,you can add more if you like
¼cupgrated Parmesan cheese
Instructions
Preheat oven to 375°F
Trim the ends off of the green beans and cut them in half. Blanch in a microwave by placing them in a medium-sized bowl with two tablespoons of water. Cover with a plate or plastic wrap and microwave for three minutes until they are bright green and crisp-tender. Drain and set aside.
Melt the butter in a large pot over medium heat. Add diced onions and garlic. Brown for 2-3 minutes, stirring frequently.
Add chopped mushrooms and cook for 4 minutes, stirring frequently. Stir in the flour.
Add the chicken broth and stir to combine. Add one and a half cups of the milk or heavy cream. Add salt, pepper, and soy sauce.
Whisk the sauce together and bring the mixture to a gentle boil. Stir frequently for 4-5 minutes, and it will thicken. Remove from heat. Allow to cool for 5-7 minutes
Add green beans and the remaining half cup of milk to the sauce. Stir until combined.
Pour the green bean mixture into a 9x13-inch baking dish, coated with non-stick cooking spray. Top with crispy fried onions and parmesan cheese.
Bake at 375°F for 22-28 minutes or until bubbly and golden brown. Let it rest for a few minutes and serve hot or warm.
