Instructions
Preheat the oven to 350°F. Spray a mini muffin pan with nonstick spray. Set aside.
Cream the butter, sugar, baking soda, and salt for about a minute.
Add the egg, vanilla extract, banana, and sour cream. Beat until smooth and creamy, about one minute.
Add the flour and beat on low just until combined. Add the pecans and mix well.
Use a 1 ½ inch diameter ice cream scoop and fill the mini muffin pan cups about ¾ full.
Bake for 15-18 minutes, or until golden brown and the middle springs back when pressed. Remove the muffins from the oven and let them sit for 10 minutes. Remove from the pan and let them cool completely.
Notes
Use a baking release spray, not standard nonstick spray — regular spray caused these to stick badly in testing.
Yield varies by pan; a smaller-cup pan will produce more than 24.
Bananas should be visibly overripe with dark spots for the best flavor.
To toast pecans quickly, spread chopped pecans on a plate and microwave in 1-minute increments, checking from the 4-minute mark, until slightly darker and fragrant (about 5-6 minutes total, depending on your microwave).
Store airtight at room temperature for 2 days, refrigerated up to a week, or freeze up to 3 months.
Variation: For Banana Craisin Mini Muffins, use ½ cup craisins and reduce pecans to ½ cup.
