    Banana Nut Bread Mini Muffins (Extra Light and Tender)

    Banana Nut Bread Mini Muffins take everything you love about classic banana bread and turn it into a warm, tender bite you can grab in one hand. They’re rich, moist, and packed with toasted pecans, and unlike most banana bread, this batter gets creamed with a mixer instead of stirred by hand, which is exactly why these little muffins turn out so light.

    You’ll need about 28 minutes start to finish, one bowl, and bananas that are truly overripe; soft, spotty, and past the point you’d want to eat one plain. You will also need a 24-count mini muffin pan and a good nonstick spray that actually releases; I’ll tell you below exactly which one I use, because the wrong spray will ruin your morning.

    Why This Recipe Works

    My first attempt at these muffins was a real disaster. I tried adapting my regular banana bread recipe down to mini-muffin size, and the muffins came out dense, crumbly, and stuck stubbornly to the pan. It turns out banana bread and mini banana muffins are not the same animal.

    My sister, Chula, came to the rescue with her Banana Craisin Mini Muffins recipe, and I adapted it by swapping out the craisins for extra pecans. The real secret is the method: you cream the butter, sugar, baking soda, and salt together for about a full minute before anything else goes in the bowl. That one step is what gives these muffins their light, tender crumb instead of the dense, heavy texture my first attempt produced. A stand mixer makes quick work of it, but a hand mixer does the job just fine.

    Key Ingredients

    • Unsalted butter, room temperature - creamed with the sugar for structure and that light texture.
    • Granulated sugar, baking soda, and salt - creamed in with the butter, not added later. This step makes the difference. If you only have salted butter, leave out the salt.
    • A large egg, vanilla extract, one overripe banana, and sour cream - beaten in together until smooth. Full-fat sour cream is what I tested with, but low-fat will work.
    • All-purpose flour - added last, mixed on low just until combined so the muffins stay tender.
    • Toasted pecans - see my note below on the fastest way I’ve found to toast a small batch.

    Substitutions and Variations

    • Banana Craisin Mini Muffins: Add ½ cup craisins and reduce the pecans to ½ cup. Dried cherries or blueberries work well in place of the craisins, too.
    • Fresh blueberries: You can add them, but keep in mind they bring extra moisture, so you may need to adjust your bake time slightly.
    • Sour cream: Low-fat sour cream can be substituted for full-fat; I tested with full-fat.

    How to Make Banana Nut Bread Mini Muffins

    1. Preheat your oven to 350°F. Spray a 24-count mini muffin pan with a nonstick spray that actually releases (see Sharon’s Tips) and set it aside.

    1. Cream the butter, sugar, baking soda, and salt together for about a minute, until light and combined.
    Add egg and sour cream to the muffin batter.
    1. Add the egg, vanilla, mashed banana, and sour cream. Beat until smooth and creamy, about one more minute.
    Add flour and other dry ingredients to the muffin batter.
    1. Add the flour and mix on low just until combined, then fold in the pecans.

    1. Scoop the batter into the muffin cups using a 1½-inch ice cream scoop, filling each about ¾ full.

    1. Bake for 15 to 18 minutes, until golden brown and the centers spring back when pressed.

    1. Let the muffins rest in the pan for 10 minutes, then remove and cool completely on a wire rack.

    What to Serve With Banana Nut Bread Mini Muffins

    These bite-sized muffins are perfect for lunch boxes, an after-school snack, or a grab-and-go breakfast on a busy morning. Add them to a brunch spread alongside my Old-Fashioned Fruit Salad with Orange Simple Syrup or Old-Fashioned Southern Ambrosia for something lighter, or pair them with my Easy Crustless Ham and Cheese Quiche if you want a heartier brunch table. They’re also a lovely little treat alongside a cup of coffee or tea.

    Storage and Reheating

    These muffins keep well at room temperature in an airtight container for a couple of days, or in the refrigerator for about a week. They also freeze beautifully; let them cool completely, then freeze in a single layer before transferring to a freezer bag.

    If your bananas ripen before you’re ready to bake, don’t let them go to waste: peel them, seal them in a freezer bag in the amount your recipe calls for, and freeze. They thaw quickly whenever you’re ready.

    FAQs

    Why did my mini muffins stick to the pan?

    Regular nonstick baking spray didn’t cut it in my testing-the muffins tore apart when I tried to get them out. A baking release spray, like Bak Kleen ZT, solved the problem completely.

    Can I use low-fat sour cream instead of full-fat sour cream in this banana mini muffin recipe?

    Yes. I tested this recipe with full-fat sour cream, but low-fat will work fine as a substitute.

    Why did I get more mini muffins than the recipe says?

    Mini muffin pans aren’t a standard size. My pan produced 30 muffins; my sister’s produced 20 from the same batter. Your yield will depend on your particular pan.

    Can I make these banana mini-muffins ahead and freeze them?

    Yes, they freeze well. Cool them completely, freeze in a single layer, then transfer to a freezer bag.

    How ripe should my banana be for these mini muffins?

    Very ripe; visible dark spots, well past the point you’d want to eat it plain. If it looks appetizing on its own, it isn’t ready for this recipe.


    Sharon’s Tips

    I have to tell you about the spray, because it made all the difference. After my mini muffins stuck to the pan and tore apart when I tried to get them out, I ordered a product called Bak Kleen ZT off Amazon, and every single muffin popped right out clean. I’ve used it ever since, and I can’t recommend it enough; most kitchen supply stores carry something similar if you’d rather not order online.

    One thing that surprised me: mini muffin pans are not a standard size. My pan gave me a full 24 muffins plus 6 more, while my sister’s recipe, tested in her pan, only yielded 20. So don’t be alarmed if your yield comes out a little different than mine; it depends entirely on your pan.

    And please, resist the urge to bake with a banana that still looks good enough to eat. You want visible dark spots and a banana that’s well past ripe. That’s when the starches have turned to sugar, and that’s what gives banana bread (and these muffins) their flavor.

    One more thing: I always toast my pecans before adding them, and for a small batch like this, I skip the oven and use the microwave instead. Spread the chopped pecans on a plate and microwave in 1-minute increments until they turn ever so slightly darker and you can smell them; start tasting them around the 4-minute mark. Mine usually take about 5 to 6 minutes total, but the exact time depends on your microwave’s wattage, how finely you chopped the nuts, and even how fresh they are.

    Equipment

    Ingredients
      

    • ¼ cup unsalted butter room temp
    • ½ cup granulated sugar
    • ½ teaspoon baking soda
    • ¼ teaspoon salt
    • 1 large egg room temperature
    • 1 teaspoon vanilla extract
    • 1 overripe banana peeled and roughly mashed with a fork
    • ¼ cup sour cream
    • ¾ cup all-purpose flour
    • ¾ cup chopped toasted pecans

    Instructions
     

    • Preheat the oven to 350°F. Spray a mini muffin pan with nonstick spray. Set aside.
    • Cream the butter, sugar, baking soda, and salt for about a minute.
    • Add the egg, vanilla extract, banana, and sour cream. Beat until smooth and creamy, about one minute.
    • Add the flour and beat on low just until combined. Add the pecans and mix well.
    • Use a 1 ½ inch diameter ice cream scoop and fill the mini muffin pan cups about ¾ full.
    • Bake for 15-18 minutes, or until golden brown and the middle springs back when pressed. Remove the muffins from the oven and let them sit for 10 minutes. Remove from the pan and let them cool completely.

    Notes

    • Use a baking release spray, not standard nonstick spray - regular spray caused these to stick badly in testing.
    • Yield varies by pan; a smaller-cup pan will produce more than 24.
    • Bananas should be visibly overripe with dark spots for the best flavor.
    • To toast pecans quickly, spread chopped pecans on a plate and microwave in 1-minute increments, checking from the 4-minute mark, until slightly darker and fragrant (about 5-6 minutes total, depending on your microwave).
    • Store airtight at room temperature for 2 days, refrigerated up to a week, or freeze up to 3 months.
    • Variation: For Banana Craisin Mini Muffins, use ½ cup craisins and reduce pecans to ½ cup.
