Substitutions and Variations
- Banana Craisin Mini Muffins: Add ½ cup craisins and reduce the pecans to ½ cup. Dried cherries or blueberries work well in place of the craisins, too.
- Fresh blueberries: You can add them, but keep in mind they bring extra moisture, so you may need to adjust your bake time slightly.
- Sour cream: Low-fat sour cream can be substituted for full-fat; I tested with full-fat.
How to Make Banana Nut Bread Mini Muffins
- Preheat your oven to 350°F. Spray a 24-count mini muffin pan with a nonstick spray that actually releases (see Sharon’s Tips) and set it aside.

- Cream the butter, sugar, baking soda, and salt together for about a minute, until light and combined.

- Add the egg, vanilla, mashed banana, and sour cream. Beat until smooth and creamy, about one more minute.

- Add the flour and mix on low just until combined, then fold in the pecans.

- Scoop the batter into the muffin cups using a 1½-inch ice cream scoop, filling each about ¾ full.

- Bake for 15 to 18 minutes, until golden brown and the centers spring back when pressed.

- Let the muffins rest in the pan for 10 minutes, then remove and cool completely on a wire rack.
What to Serve With Banana Nut Bread Mini Muffins
These bite-sized muffins are perfect for lunch boxes, an after-school snack, or a grab-and-go breakfast on a busy morning. I’ve used it ever since, and I can’t recommend it enough; most kitchen supply stores carry something similar if you’d rather not order online.
One thing that surprised me: mini muffin pans are not a standard size. My pan gave me a full 24 muffins plus 6 more, while my sister’s recipe, tested in her pan, only yielded 20. So don’t be alarmed if your yield comes out a little different than mine; it depends entirely on your pan.
And please, resist the urge to bake with a banana that still looks good enough to eat. You want visible dark spots and a banana that’s well past ripe. That’s when the starches have turned to sugar, and that’s what gives banana bread (and these muffins) their flavor.
One more thing: I always toast my pecans before adding them, and for a small batch like this, I skip the oven and use the microwave instead. Spread the chopped pecans on a plate and microwave in 1-minute increments until they turn ever so slightly darker and you can smell them; start tasting them around the 4-minute mark. Mine usually take about 5 to 6 minutes total, but the exact time depends on your microwave’s wattage, how finely you chopped the nuts, and even how fresh they are.

Instructions
