    This recipe actually taught me something. The original version called for brushing the pork chops with Dijon mustard and olive oil before coating them with panko. While the chops were juicy, the breading stayed pale, became soggy, and slid right off.

    • Parmesan Cheese: Freshly grated is best for maximum flavor and texture.
    • Seasonings: A blend of garlic powder, paprika, dried oregano, thyme, salt, and pepper brings the perfect balance of savory and herby goodness.

    How to make Air Fryer Bone-In Pork Chops

    Follow these simple steps for crispy, golden pork chops every time:

    1. Whisk the egg, Dijon mustard, and water or milk in a shallow dish until combined.
    2. Use a paper towel to pat the pork chops very dry, then sprinkle them with a light dusting of flour and rub it in lightly. Shake off any excess.
    3. Whisk together the salt, pepper, garlic powder, paprika, oregano, thyme, Parmesan cheese, and panko breadcrumbs.
    4. Dip each chop in the egg mixture, letting any excess drip off. Then dip each pork chop in the panko mixture and press it in well so it sticks, covering both sides.

    1. Place the coated chops on a wire rack for 5-10 minutes to let the coating dry slightly so it adheres to the chops while cooking.
    2. Preheat the air fryer to 375°F (190°C) for a few minutes and then spray the bottom of the basket with cooking spray. Place the pork chops in the basket and spray both sides lightly with cooking spray. Cook for 10-12 minutes, flipping halfway.  (Cook in batches if the basket doesn't fit all 4 pork chops.)

    1. Check for doneness: Pork chops are ready when they reach an internal temperature of 145°F. Let them rest for a couple of minutes before serving.

    • 4 bone-in pork chops ½ inch thick
    • ½ cup all-purpose flour
    • 1 tablespoon Dijon mustard
    • 1 egg, beaten
