    Shrimp Cobb Salad with Blue Cheese Dressing

    Shrimp Cobb Salad with Blue Cheese Dressing is a delicious, versatile, nutritious, quick and easy salad to prepare!

    Shrimp Cobb Salad with Blue Cheese Dressing is packed full of flavorful shrimp, smoky bacon, eggs, juicy tomatoes, avocado, crunchy romaine lettuce and topped with a wonderful tangy homemade blue cheese dressing. Not only is Shrimp Cobb Salad with Blue Cheese Dressing healthy, but it can also be made in as little as 15 minutes, and it’s perfect for a light dinner or lunch. It would also be great served at a nice brunch or luncheon. Frozen, cooked, peeled and deveined shrimp and pre-cooked hard-boiled eggs are the secrets to having a one-dish meal that only takes minutes to prepare.

    If you have been following my blog, you know that I love, love, love shrimp. I could eat them every day, prepared in any number of ways and never get tired of them. This Cobb Salad with shrimp is certainly no exception. Various stories abound about how the Cobb Salad was invented. One says that it came about in the 1930s at the Hollywood Brown Derby restaurant, where it became a signature dish.  The story goes that it was named after the restaurant’s owner, Robert Howard Cobb. The legend is that Cobb had not eaten all night, and so he mixed leftovers he found in the kitchen.

    To make Shrimp Cobb Salad with Blue Cheese Dressing, gather your ingredients. One way to remember all of the components is to use the mnemonic EAT COBB: Egg, Avocado, Tomato, Chicken, Onion, Bacon, Blue cheese, then add lettuce.  Of course, since our salad is a Shrimp Cobb Salad, we need to add shrimp instead of chicken. The ingredients for the homemade Blue Cheese Dressing include blue cheese, sour cream, buttermilk, mayonnaise, white wine vinegar, Worcestershire sauce, and black pepper.

    For some reason, in the past, I was always a little hesitant about making homemade salad dressing, I guess I thought it would be too complicated, but in reality, nothing could be easier. You just add all of the ingredients to a mason jar and shake well!

    To make the homemade Blue Cheese Dressing, add blue cheese crumbles, sour cream, buttermilk, mayonnaise, white wine vinegar, Worcestershire sauce and black pepper to a mason jar and shake well. Once you taste this fresh, delicious tangy dressing, I guarantee you will never buy prepared salad dressing again. Refrigerate the dressing until you are ready to use it.

    Blue-Cheese-Dressing

    To assemble the salad, put half of the lettuce on a plate. Top with half of the chopped egg, avocado slices, chopped tomato, chopped scallions, crumbled bacon, shrimp, and blue cheese crumbles. Then add your homemade Blue Cheese Dressing.

    That’s it! I told you it was easy.

    Ingredients

    Shrimp Cobb Salad Ingredients:

    • 1/2 pound cooked peeled and deveined shrimp
    • 1 head romaine lettuce chopped
    • 2 hard boiled eggs chopped
    • 2 Roma tomatoes chopped
    • 1 ripe avocado sliced
    • 2 pieces bacon cooked
    • 2 scallions chopped
    • 2 Tbsp blue cheese crumbles

    Homemade Blue Cheese Dressing Ingredients

    • 4 ounces blue cheese crumbles
    • 1/3 cup sour cream
    • 1/3 cup buttermilk
    • 1/4 cup mayonnaise
    • 1 Tbsp white wine vinegar
    • 1/4 tsp Worcestershire sauce
    • 1/4 tsp ground black pepper

    Instructions

    • To make the homemade Blue Cheese Dressing, add blue cheese crumbles, sour cream, buttermilk, mayonnaise, white wine vinegar, Worcestershire sauce and black pepper to a mason jar and shake well.
    • To assemble the salad, put half of the lettuce on a plate. Top with half of the chopped egg, avocado slices, chopped tomato, chopped scallions, crumbled bacon, shrimp, and blue cheese crumbles. Then add homemade Blue Cheese Dressing.
