Why you'll love this recipe
- Halloween dinner made easy: Ready in 30 minutes, making it a stress-free pre-trick-or-treat meal.
- Spooky and fun: With pasta "brains" and eyeball meatballs, it's one of those main dishes for Halloween that kids can't resist.
- Customizable: Use spinach pasta for green, black bean pasta for spooky black, or regular noodles if that's what you have on hand. Use meatballs plus ground beef for a double-meat version, or skip the ground beef for a simpler, more budget-friendly recipe.
- Party-approved: A guaranteed crowd-pleaser on any Halloween menu, whether you're feeding kids or adults, like this Halloween party dessert, Easy Halloween Meringue Ghosts, and this fun Halloween treat, Chocolate Halloween Cupcakes and Icing.
- Balanced comfort food: Like my easy Hamburger Noodle Casserole, it’s a hearty, meaty pasta dinner that sneaks in some veggies without complaints.
Main ingredient notes and easy substitutions

Let's talk ingredients: what you need, what you can swap, and how to make it work with what's in your pantry. These are the main ingredients; the full list is waiting down in the recipe card.
- Spinach spaghetti: Gives you that eerie green color. If you can't find it, swap in black squid ink pasta, fettuccine, or regular spaghetti.
- Meatballs: A 26 oz bag of dinner-sized frozen Italian meatballs works well, about 3-4 per serving. You can also use homemade.
- Ground beef: Adds richness, but you can leave it out for a lighter (and more budget-friendly) option.
- Spaghetti sauce: Your favorite jarred marinara or spaghetti sauce works fine; choose one you love.
- Candy eyes: Large candy eyes work best with dinner-sized meatballs; small or medium-sized candy eyes are suitable for mini or appetizer-sized meatballs. For a savory twist, try mozzarella balls with olive slices.
Recipe variations and twists
- Use edamame pasta or chickpea pasta for extra protein.
- Add roasted garlic or red pepper flakes for a flavor boost.
- Make it extra spooky with black pasta and white mozzarella "eyeballs."
- Hosting adults? Swap candy eyes for olive "pupils" for a savory version.
How to make Halloween Pasta Spooky Spaghetti with Eyeballs
This is a summary of the steps; the complete directions are in the recipe card below.

- Brown the beef: In a large skillet over medium-high heat, cook the ground beef until it is browned and crumbly. Drain excess grease. Add the meatballs and let them brown slightly.

- Simmer the sauce and meatballs: Stir in the spaghetti sauce. Reduce the heat to medium and simmer for 8-10 minutes, until the meatballs are heated through and coated in sauce.

- Cook the pasta: Meanwhile, boil the spinach spaghetti according to package directions. Reserve ½ cup of pasta water, then drain.

- Assemble the platter: Add pasta water to the sauce if it's too thick. Arrange pasta on a serving platter, spoon sauce and meatballs over the top, and sprinkle with Parmesan. Place a candy eye (or olive/mozzarella "eye") on each meatball.
- Garnish and serve: Garnish with fresh basil, if desired, and serve warm.

Tips for perfect results every time
- Don't add the candy eyes until just before serving (they'll melt into a gooey mess and remove them before storing in the refrigerator).
- Use a platter instead of a bowl so the "eyeballs" stay visible and spooky.
- For the spookiest effect, serve your Halloween pasta on a dark platter so the green spaghetti and eyeball meatballs really pop.
- Want extra Halloween flair? Sprinkle shredded mozzarella "webs" over the top and melt briefly under the broiler.
